Tabasco chillies are used to make the famous Tabasco hot chilli sauce which has a dry smoky taste so useful for spicing up & adding flavour to food.
Tabasco is a Capsicum frutescens which is a wild chilli pepper having genetic proximity to the cultivated pepper Capsicum sinense native to Central and South America. Pepper cultivars of C. frutescens can be annual or short-lived perennial plants. Flowers are white with a greenish white or greenish yellow corolla, and are either insect- or self-pollinated.
Typically, the pods are small and tend to have an ellipsoid-conical shape. Frutescens plants are compact with short stubby growth and a large number of flowers, making them an ideal choice for container gardening.
Capsicum frutescens is a PERENNIAL growing to 1m by 0.6 m. It is hardy to UK zone 9 and is frost tender. It is in flower from August to September. The species is hermaphrodite (has both male and female organs).
Tabasco chilli plants are very pretty as the peppers mature at different stages and ripen from greeny-yellow to orange to red. The very hot small chillies are held upright on the plant and measure 2.5-3cm long by 1cm. They taste great fresh but are also excellent dried. It does mature late therefore sow early to ensure good yields. A great variety for connoisseurs.
