Herb Seeds from Sow Seeds
Winter Savory is similar to Summer Savory but with a more pungent peppery taste, similar to Thyme. It has small pinnate leaves and small white flowers with a pinky/purple tinge.
It is a hardy semi-evergreen perennial that reaches 30cm tall by 20cm wide. The stems do become woody with age so it is good to regularly pick the stems to ensure fresh new growth.
In cooking, Winter Savory has a reputation for going very well with both beans and meats, very often lighter meats such as chicken or turkey, and can be used in stuffing. It can also be used in soups and sauces. It has a strong flavour (more than Summer Savory), while uncooked but loses much of its flavour under prolonged cooking. It can be added to breadcrumbs, as a coating for various meats.
Like Summer Savory it is said to calm the stomach and aid digestion and also is thought to bring relief when rubbed on bee/wasps stings. If grown inside it can be harvested all year and makes a good container plant.
It is used as a companion plant for beans, keeping bean weevils away, and also plant with roses, to reduce mildew and aphids.

How to Sow: |
Sow undercover in a propagator (February-May) at 18C. Water carefully. Germination usually takes 14-21 days. Be careful not to over-water seedlings as they are prone to 'damping off'. When the seedlings are large enough to handle transplant into 9cm pots and grow them on in cooler conditions until large enough to transplant outside. Space plants 20cm apart.

Keep picking top growth to ensure new fresh growth. In the second year, a good cut at the end of June will prevent the stem becoming woody.
