Cayenne Red, also known as de Cayenne, is a very productive chilli pepper and matures from green to red with a medium heat. Cayenne Red is a very productive chilli pepper. The peppers are long & thin (12cm long by 1.5cm) and mature from green to red with a medium heat.
Cayenne Red is a Capsicum annuum which is a species of the plant genus Capsicum native to southern North America, the Caribbean, and northern South America. This species is the most common and extensively cultivated of the five domesticated capsicums. The species encompasses a wide variety of shapes and sizes of peppers, both mild and hot, such as bell peppers, jalapeños, and cayenne peppers. Capsicum annuum is an evergreen Perennial growing to 1m by 1m at a medium rate. It is hardy to UK zone 9 and is frost tender. It is in leaf all year, in flower from July to September, and the seeds ripen from August to October. The species is hermaphrodite (which has both male and female organs).
Cayenne Red chillies are great dried and used as Cayenne Pepper. Cayenne Red has been cultivated & used in cooking from as long ago as 4,000BC. It was brought from Chile to Portugal in the late 1400's by Christopher Colombus. From there it was shipped to Asia by Vasco da Gama where it is a staple ingredient in Asian cookery and where most of the world's chillies are now grown.
How To Create Dried Cayenne Chilli Powder
Pierce each chilli with a knife and leave on a sunny windowsill to dry for 2-3 weeks, or dry overnight in a low oven at 50c, or in a food dehydrator.
After the chillies have dried, wearing gloves, remove the stems and seeds and slice the thicker peppers into rings and the thinner peppers in half. Grind the chillies in a food processor and store in an airtight container ready to use or to make into your own blend of Cayenne powder.
